Carnitas (pork Nuggets) Recipe

Ingredients
  • 1 sm Radicchio head from treviso
  • 4 oz Extra-virgin olive oil from lago di garda; divided
  • 1/4 ts Caraway seeds
  • 1/4 c Red wine vinegar
  • 6 oz Beef tenderloin; sliced paper thin
  • 1 Green apple; peeled and cored
  • 1/4 ts Cinnamon
  • 1/4 ts Freshly-ground black pepper
  • 1 tb Salt

Directions
  • Step #1 Lay beef slices out in a shallow casserole.
  • Step #2 In a small bowl, caraway seeds, mix together cinnamon, pepper, vinegar & salt & pour over meat.
  • Step #3 Cut apple into 1/8-inch julienne & place this in dressing bowl.
  • Step #4 Pull leaves off Treviso & toss with 2 oz Garda oil and Spice up lightly with salt.
  • Step #5 To serve, place 3 slices of beef on each plate & cover the slices with handfuls of salad.
  • Step #6 Drizzle the salad with more oil & serve.
