Step #1 Take the salmon & grate over the lime zest & Spice up this with the sugar & salt.
Step #2 Leave to stand for 1 hr.
Step #3 Once marinated wipe the flesh clean with a damp clean cloth.
Step #4 Slice the salmon very thinly & place it in a circle in the centre of the plate & top this with the red pepper, coriander & roasted sesame seeds.
Step #5 Take the sour cream & drag a pipe thin line back and forth over the salmon.
Step #6 On the salmon place a quenelle of avocado that's been crushed with a fork & mix with the sour cream, coriander & a little lime juice.
Step #7 Surround the salmon with the cucumber, tomato & yellow peppers.
Step #8 Mix the wasabi, wine & olive oil to make the dressing & dot it all over the plate.
