Carpaccio Of Scallops With Lime And Passion Fruit Recipe

Ingredients
  • 900 g Salmon fillet; skin on
  • Extra virgin olive oil
  • 1 Lime zest
  • Cucumber; sliced
  • Wasabi
  • Tomato; sliced
  • White wine
  • Sour cream
  • 2 ts Sugar
  • Yellow pepper; sliced
  • 20 g Salt;
  • Fresh coriander; sliced
  • Sesame seeds; roasted
  • Avocado
  • 1 Red pepper; sliced

Directions
  • Step #1 Take the salmon & grate over the lime zest & Spice up this with the sugar & salt.
  • Step #2 Leave to stand for 1 hr.
  • Step #3 Once marinated wipe the flesh clean with a damp clean cloth.
  • Step #4 Slice the salmon very thinly & place it in a circle in the centre of the plate & top this with the red pepper, coriander & roasted sesame seeds.
  • Step #5 Take the sour cream & drag a pipe thin line back and forth over the salmon.
  • Step #6 On the salmon place a quenelle of avocado that's been crushed with a fork & mix with the sour cream, coriander & a little lime juice.
  • Step #7 Surround the salmon with the cucumber, tomato & yellow peppers.
  • Step #8 Mix the wasabi, wine & olive oil to make the dressing & dot it all over the plate.
