Carrageen Moss Cream Recipe

Ingredients
  • 1 tb Salt
  • 1/4 c Currants dried
  • 1 c Burgundy wine
  • 8 c Red cabbage thinnly sliced or shredded
  • 1 ea Apple cored, peeled, minced
  • 1 tb Black pepper
  • 1 ea Onion large minced
  • 2 tb Sugar
  • 2 tb Corn or sunflower oil
  • 1/3 c Cider vinegar
  • 1/4 c Cherries dried
  • 3 ea Garlic cloves crushed

Directions
  • Step #1 Boil cabbage for 2-3 minmutes, remove this from water & drain.
  • Step #2 In a large pot cook the onion, salt, garlic, & pepper in the oil.
  • Step #3 ASfter onion beocmes transluscent add the wine, apple, currants & cherries, sugar, vinegar, & vinegar & bring all to a boil.
  • Step #4 Add the cabbage, stir, remove cover, simmer for 20 mins, reduce heat, & bring back to a boil for 10 mins.
  • Step #5 This should reduce the liquid by 1/3 to 1/2 in volume.
  • Step #6 remove this from heat, beef, allow this to cool for 5 mins & serve this with either pork, or lamb.
