Step #1 In a clean sink, wash fresh ham well with cold water.
Step #2 Fill sink with fresh water & dissolve 1/2 c coarse salt in the water.
Step #3 Soak ham, completely submerged for 20 mins, before removing & drying thoroughly.
Step #4 put in the fridge until ready to marinate.
Step #5 Place the onion, spices, garlic, vinegar, jalapeno, scallions, molasses & oil in the bowl of a large food processor/blender & pulse until finely sliced.
Step #6 Make small well-spaced slits in the skin of the ham every few inches.
Step #7 Rub the ham with the jerk Spice uping & especially in the incisions in the skin.
Step #8 Be sure to use plenty of the jerk paste to ensure a boldly Spice uped roast.
Step #9 Set the ham on a platter & marinate overnight, covered & put in the fridged.
Step #10 Reserve any remaining jerk marinade.
Step #11 preheat your trusty oven to 325F degrees.
Step #12 Place the ham in a large roasting pan, place this in the oven & roast for 2 to 2 1/2 hrs or until the internal temperature reads 165 degrees at its thickest part at the bone.
Step #13 If the ham browns too rapidly tent it with aluminum foil.
Step #14 Remove & let rest for 20 mins before serving.
Step #15 This recipe yields 10 to 12 servings.
