Ingredients
  • 1 7/8 qt Water
  • 1 Onion; sliced
  • 1 Acorn squash; baked
  • 8 c Vegetable broth
  • 1 ts Salt
  • 3/4 ts White pepper
  • 1 1/2 lb Carrots; grated
  • 1 1/2 ts Dill
  • 2 ts Thyme
  • 1 tb Olive oil
  • 1/2 c Rolled oats
  • 2 Cloves garlic; minced

Directions
  • Step #1 Saut??onions in olive oil in a large soup pot.
  • Step #2 Add garlic, herbs, salt & pepper.
  • Step #3 add in the remaining ingredients & cook till carrots are tender.
  • Step #4 Puree in mixer or food processor/blender.
