Ingredients
  • 1/4 c Finely-sliced red bell pepper
  • 1 lb Carrots
  • 2 md Cucumbers; peeled
  • 1/4 c Fresh basil leaves - ; finely sliced
  • Salt; to taste
  • 1 ts Dijon-style mustard
  • 3 tb Fresh lemon juice
  • Freshly-ground black pepper; to taste
  • 1/2 c Extra-virgin olive oil

Directions
  • Step #1 With a swivel bladed vegetable peeler shred the carrots & cucumbers into fettucini like strands.
  • Step #2 In a large bowl whisk together the lemon juice & mustard.
  • Step #3 Add the olive oil in a slow stream while whisking constantly.
  • Step #4 stir in the sliced basil & red bell pepper.
  • Step #5 Spice up vinaigrette to taste with salt & pepper.
  • Step #6 Add the strands of carrots & cucumbers & toss to mix.
  • Step #7 Adjust Spice uping if necessary.
  • Step #8 This recipe yields 4 servings.
