Carrot And Ginger Soup Recipe

Ingredients
  • Vegetable oil
  • 2 1/4 c Grated carrots
  • 3 ts Grated fresh ginger; or 1 tsp. ground
  • 3/4 c Bread crumbs; plus 2 tbsp.
  • 3 lg Eggs
  • Salt & freshly ground black pepper

Directions
  • Step #1 1.
  • Step #2 In a medium bowl, whisk the eggs.
  • Step #3 Mix in the grated carrots, 3/4 c of the bread crumbs, ginger, & salt & pepper to taste.
  • Step #4 Add another tbsp or two of bread crumbs as needed to hold the mixture together.
  • Step #5 2.
  • Step #6 Heat about 1/4-inch of oil in a large skillet over moderately high heat until it is just starting to smoke.
  • Step #7 For each pancake, drop a heaping tbsp of batter into the hot oil & flatten with spatula.
  • Step #8 Cook about 1 1/2 mins on each side.
  • Step #9 Yields: 12 to 14 pancakes.
