Ingredients
  • 1/4 c sliced; fresh ginger root
  • 2 tb Fresh lemon juice
  • 1 pn Curry powder
  • Salt & pepper to taste
  • 1 c Dry white wine
  • 4 c Chicken stock
  • 1/4 c Margarine
  • 3 Cloves minced garlic
  • 1 lg sliced onion
  • 2 1/2 c Carrots;

Directions
  • Step #1 ~ 6 large servings Melt margarine in large pot & cook onions, wine & carrots & heat to boiling, ginger & garlic for 15 - 20 mins Add stock, then simmer on med.
  • Step #2 for 45 mins Puree soup & Spice up this with salt, pepper, curry powder & lemon juice Serve hot or chilled.
