Carrot And Ginger Soup Recipe

Ingredients
  • 4 sliced carrots
  • 1 sliced celery stalk
  • 4 oz Low-fat cream cheese
  • Salt & pepper
  • 2 Minced garlic cloves
  • 1 sliced yellow onion
  • 1 tb Butter
  • 1 1 inch piece ginger - grated
  • 1 tb Olive oil
  • 4 c Chicken stock

Directions
  • Step #1 Directions: In a large soup pot, heat the butter & oil.
  • Step #2 Add the onion, celery, carrots, garlic & ginger.
  • Step #3 Saut? over med-heat/flame until onions are tender.
  • Step #4 Add the chicken stock & Spice up this with salt & pepper.
  • Step #5 Bring the mixture to a boil, reduce heat & allow to simmer for 45 mins until carrots are very tender.
  • Step #6 remove this from heat & puree in batches in a mixer with the low-fat cream cheese.
  • Step #7 Strain the soup & either serve hot or chill.
  • Step #8 Garnish with sliced scallions.
