Ingredients
  • 2 Sticks celery; sliced
  • 7 c Rich chicken stock
  • 1/4 c Crystallized ginger; sliced
  • 1 sm Onion; sliced
  • Salt & pepper to taste
  • 1/4 c White rice
  • 1/2 c Cream
  • 6 Carrots; peeled & sliced

Directions
  • Step #1 1.
  • Step #2 Place carrots, ginger, celery, onion, rice & stock in a large pot & bring to the boil.
  • Step #3 Reduce heat to a simmer, cover & cook until the carrots are tender.
  • Step #4 2.
  • Step #5 Puree the soup in a mixer or food processor/blender in small batches.
  • Step #6 Return to the pot & adjust Spice uping.
  • Step #7 Add cream & heat through but do not boil.
