Carrot And Orange Soup With Ginger Recipe

Ingredients
  • Salt & pepper to taste
  • 3 Oranges; juice of
  • 1/4 c Sour cream
  • 6 c Light vegetable stock
  • 750 g Carrots; thinly sliced
  • 1 Spanish onion; sliced
  • 2 tb Unsalted butter
  • 1/2 bn Fresh chives
  • 1 Garlic clove; sliced thin

Directions
  • Step #1 In a large saucepan, melt the butter & cook the onion & garlic slowly for 5 mins.
  • Step #2 Add the carrots & saute for a further 10 mins until beginning to turn golden around the edges.
  • Step #3 Add the stock & salt & pepper to taste then add the orange juice & let simmer for 20 mins, or until carrots are very tender.
  • Step #4 In a mixer or food processor/blender, puree the soup with the sour cream until smooth.
  • Step #5 Serve garnished with chives.
