Carrot And Pear Salad - The Carrot Cookbook Recipe

Ingredients
  • 1 sm Flake; garlic, coarsely sliced
  • 1 Green chilli; deseeded and coarsely sliced
  • 50 g Roasted salted peanuts;
  • 15 g Coriander leaves; sliced fine
  • 1 125 gram thi curd
  • 2 Carrots;
  • 1/4 ts Salt or to taste;
  • 1/2 ts Sugar;

Directions
  • Step #1 PEEL & grate the carrots coarsely.
  • Step #2 Crush peanuts with a wooden pestle or rolling pin.
  • Step #3 Mix garlic, green chilli & salt & crush to a pulp.
  • Step #4 Beat the curd until smooth & stir in the the garlic mixture.
  • Step #5 Add the carrots, peanuts, sugar & coriander leaves (if using) and mix thoroughly.
  • Step #6 This raita complements almost any meal & can be served as a relish with kababs or pakoras.
