Ingredients
  • 1 lb Carrots
  • Marinara sauce
  • Garlic
  • 2 Onions
  • Matzoh meal
  • 2 Eggs

Directions

  • Step #2 Beat eggs & add one onion to the processor.
  • Step #3 Add salt & pepper to the carrots.
  • Step #4 Add matza meal to form mixture into small croquettes.
  • Step #5 Brown the croquettes in a frying pan & set aside.
  • Step #6 Brown onion & garlic, add marinara suace & let simmer for about l0 mins.
  • Step #7 Layer croquettes in baking dish.
  • Step #8 pour the sauce over & bake in 350 degree oven for 45 - 60 mins.
  • Step #9 May be served as an appetizer or as a side dish.
  • Step #10 ( Mom serves these all year long!).
