Carrot Ginger Dressing Recipe

Ingredients
  • Flour; plain/strong to dust
  • 50 g Gruyere cheese; grated
  • 200 g Carrot; grated
  • 100 g Potato; boiled & sieved
  • 1 1/2 Eggs; beaten
  • Salt & pepper
  • 40 g Butter; unsalted

Directions
  • Step #1 Prepare a steamer.
  • Step #2 Sweat the carrot in half the quantity of butter for 3 mins.
  • Step #3 Boil & dry the potato, then place through a sieve or ricer.
  • Step #4 Mix the carrot, potato, Gruyere cheese egg & Spice up this with salt and pepper.
  • Step #5 Grease the moulds with a little butter & dust with the flour.
  • Step #6 Fill the moulds with the carrot mix & cover with the cling film.
  • Step #7 Steam for around 20 mins.
  • Step #8 Demould & serve.
  • Step #9 serve this with a tomato sauce & baby steamed vegetables.
