Carrot Latkes Recipe

Ingredients
  • 1 1/2 ts Red wine vinegar
  • 2 c Jicama; shredded
  • 1/2 ts Dried tarragon; or cilantro
  • 1 ds Pepper
  • 1/4 c Red onion; thinly sliced
  • 2 c Carrots; shredded
  • 1 tb Fresh lime juice; or lemon juice
  • 1 1/2 tb Orange juice

Directions
  • Step #1 mix carrots, jicama, & onion in a large bowl.
  • Step #2 Set aside.
  • Step #3 mix the rest of the ingredients, stirring well.
  • Step #4 Add to carrot mixture & toss carefully to coat.
  • Step #5 Cover & chill before serving.
  • Step #6 Makes 6 servings each a little less than 3/4 c.
