Carrot Pilaf Recipe

Ingredients
  • 1 Clove garlic; halved
  • 1 Bay leaf
  • 1/2 c Cider vinegar
  • 4 md Carrots pared & sliced 1/8 inch thick
  • 1 tb Granulated sugar
  • 1/2 ts Mustard seed
  • 1/2 ts Salt

Directions
  • Step #1 In a medium nonreactive saucepan, add vinegar, salt, garlic, sugar, mustard seeds & bay leaf; bring to a boil.
  • Step #2 stir in the sliced carrots, cover & return to a boil.
  • Step #3 Reduce heat to low; simmer until carrots are softened, but still crisp, 8 - 10 mins.
  • Step #4 Rinse carrots in colander under cold running water; remove bay leaf & serve.
