Carrot, Honey And Ginger Soup Recipe

Ingredients
  • 1 Stalk, celery, very thinly sliced
  • 4 Carrots, coarsely sliced
  • Salt & pepper
  • 1/2 c Pecan halves
  • 2 tb Mayonnaise
  • 1 ts Lemon juice
  • 1/4 c Sour cream
  • 1 tb Peach or mango chutney

Directions
  • Step #1 In bowl, toss together carrots, celery & pecans.
  • Step #2 mix sour cream, mayonnaise, chutney & lemon juice; Spice up this with salt and pepper to taste.
  • Step #3 Pour over carrot mixture; toss to coat.
  • Step #4 Taste and adjust Spice uping.
  • Step #5 Serve as soon as possible or cover & put in the fridge for up to 10 hrs.
  • Step #6 Makes 4 servings.
