Chilled Rice Salad Recipe

Ingredients
  • 1/2 tsp curry powder
  • 4 green onions, thinly sliced
  • 1/2 green pepper, sliced
  • 2 (6.5 oz) jars marinated artichoke hearts, drained, liquid reserved
  • 12 stuffed green olives, sliced
  • 1 (6.9 oz) package chicken-flavored rice & vermicelli mix
  • 1/3 c mayonnaise
  • 1 tsp vegetable oil

Directions
  • Step #1 Prepare rice mix according to package directions, except substitute 1 tsp oil for butter called for.
  • Step #2 Cool.
  • Step #3 Add olives, green onions & green pepper; toss to mix.
  • Step #4 Cut the artichokes into quarters & add to rice mixture; set aside.
  • Step #5 In a small bowl, mix mayonnaise, curry powder & reserved marinade; mix well.
  • Step #6 Pour over rice mixture; toss to mix.
  • Step #7 Cover & chill for at least 2 hrs.
