Carrot-sage Pasta Recipe

Ingredients
  • Cut into 1" pieces
  • 1 tb Cold unsalted butter
  • 6 sm Carrots; peeled, and
  • Salt; to taste
  • 1 Bottle high-quality red wine

Directions
  • Step #1 Bring the wine to a boil in a large saucepan set over high heat, and lower heat to a simmer.
  • Step #2 Cook the wine until syrupy & reduced to 3/4 c, about 20 mins.
  • Step #3 Place carrots in a small saucepan.
  • Step #4 Cover with water, adding a pinch of salt.
  • Step #5 Cook, covered, until tender, about 15 to 20 mins.
  • Step #6 Drain, reserving the cooking liquid.
  • Step #7 Transfer the carrots to a mixer or food processor/blender, & puree, adding a bit of the cooking liquid if the mixture is too thick.
  • Step #8 Transfer the reduced wine to a bowl, & stir about 1/2 c of the carrot puree into it.
  • Step #9 If the sauce is too thick, add a small amount of the reserved carrot cooking water.
  • Step #10 Adjust Spice uping, & whisk in butter.
  • Step #11 Makes about 1 1/2 c.
  • Step #12 Cuisine: "Mexican".
