Ingredients
  • 1 Hard; smoked linguica sausage -
  • 1 sm Zucchini; with skin
  • 3/4 c White Port wine
  • 4 lb Cockles
  • Juice of 1 lemon
  • 2 tb sliced fresh parsley; for garnish
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 sm Yellow crookneck squash; with skin
  • 1 lg Ripe tomato; seeded, sliced
  • Freshly-ground black pepper; to taste
  • 2 c Fish stock or clam juice -;
  • 1 Onion

Directions
  • Step #1 Wash cockles or clams under cold running water & scrub with a stiff brush.
  • Step #2 place this in a large bowl, cover with a wet towel, & reserve in the refrigerator.
  • Step #3 Core & seed peppers.
  • Step #4 Cut into fine julienne, about 2-inches long.
  • Step #5 Cut onion, zucchini, & yellow squash into similar julienne.
  • Step #6 Cut sausage or prosciutto into thin 2-inch lengths & finely julienne.
  • Step #7 Grease both halves of the interior of a cataplana, or large heavy Dutch-oven kettle, with butter.
  • Step #8 Put the clams in first, sausage, fish stock, Port, then the julienned vegetables, tomato, & pepper.
  • Step #9 Tightly close the two halves of the cataplana, using the pin & the clips on the outside to get a snug fit.
  • Step #10 Then place the closed dish over high heat for 10 mins, or until the shells open.
  • Step #11 Just before the 10 mins are up, open the cataplana, add the lemon juice & close it again for a min or two.
  • Step #12 Remove the cataplana from the stove & open it at the table.
  • Step #13 Sprinkle top with sliced parsley, ladle into soup bowls, & serve as soon as possible.
  • Step #14 This recipe yields 4 to 6 servings.
