Catfish Fingers Recipe

Ingredients
  • 2 Garlic cloves; sliced
  • 1/4 c Rice vinegar
  • 2 tb Molasses
  • 1 3/4 lb Codfish fillets; cut into 4 pieces
  • 1/2 Onion; sliced
  • Salt & pepper
  • 1/2 ts sliced fresh thyme; plus extra for garnish
  • 2 tb Soy sauce
  • 2 tb Toasted sesame oil
  • 1/4 ts Chinese chili oil
  • 1/2 ts sliced ginger
  • Tomato puree; ?

Directions
  • Step #1 COUNTRY SLAW--- 1/2 Head green cabbage; cored -and cut into ; 1-inch pieces 4 Plum tomatoes; sliced into -1-inch ; pieces 1/2 c Mayonnaise 2 tb Lemon juice 2 tb Slivered roasted almonds In a food processor/blender mix tomato puree, chili oil, sesame oil, soy sauce, molasses, rice vinegar, onion, garlic, ginger & thyme.
  • Step #2 Process until smooth.
  • Step #3 Spice up to taste with salt & pepper.
  • Step #4 Pout catfish in a glass baking dish & pour marinade mixture over.
  • Step #5 Turn fillets several times to coat.
  • Step #6 Cover & put in the fridge 1 to 2 hrs.
  • Step #7 Make slaw: Toss cabbage & tomatoes in a serving bowl.
  • Step #8 mix mayonnaise & lemon juice & pour over vegetables, tossing to mix well.
  • Step #9 Sprinkle top with almonds & Spice up to taste with salt & pepper.
  • Step #10 Cover & put in the fridge 1 hr.
  • Step #11 Preheat a grill.
  • Step #12 Grill fish, basting a few times with reserved marinade, 3 mins per side until charred on the outside & juicy inside.
  • Step #13 To serve, spoon slaw on 4 dinner plates, top this with cod and garnish with thyme sprigs.
