Cauliflower And Horseradish Gratin Recipe

Ingredients
  • 2 c Milk
  • 1/2 ts Dried thyme
  • 4 oz Aged cheese; grated
  • Salt & freshly ground black pepper
  • 2 Eggs; hard-cooked, peeled & sliced
  • 1 md Cauliflower; in florets
  • 1 md Onion; sliced
  • 3 tb Whole-wheat flour
  • 2 tb Butter; or margarine
  • 1 sm Pack soup croutons
  • 1 ts Mild curry powder

Directions
  • Step #1 1.
  • Step #2 Boil the cauliflower & onion in enough salted water to cover until they are just tender.
  • Step #3 Be careful not to overcook them.
  • Step #4 Drain well.
  • Step #5 2.
  • Step #6 Arrange the cauliflower & onion in a shallow oven proof dish and top this with the sliced egg.
  • Step #7 3.
  • Step #8 Put the flour, curry powder, butter or margarine & milk in a saucepan.
  • Step #9 Bring slowly to a boil, stirring well, until thickened and smooth.
  • Step #10 stir in the the thyme & Spice uping & allow the sauce to simmer for a min or two.
  • Step #11 Remove the pan from the heat & stir in the about three-quarters of the cheese.
  • Step #12 4.
  • Step #13 Pour the sauce over the cauliflower, & Sprinkle top with the croutons & the remaining cheese.
  • Step #14 Brown under a hot broiler until golden & serve accompanied with thick crusty bread.
  • Step #15 Serves 4.
  • Step #16 Note: crunchy croutons make a nice topping.
