Parmesan or Romano cheese; freshly grated
Salt; to taste
1 White-Wine Vinaigrette; see Note
Freshly-ground black pepper; to taste
1 Head Cauliflower
Directions
Step #1 Note: See the "White-Wine Vinaigrette" recipe which is included in this collection.
Step #2 Using a stainless-steel vegetable steamer, cook the cauliflower whole until fork tender, about 15 mins.
Step #3 allow this to cool, core it & break it up into flowerets.
Step #4 Toss with the dressing, salt & pepper & top with the cheese.
Step #5 This works well for a salad course with a nice lettuce garnish.
Step #6 Or you may serve it as a vegetable course at any time of the year.
Step #7 This recipe yields 4 servings.
Step #8 Comments: I had this in a workers' restaurant in Italy.
Step #9 It had never occurred to me to prepare such a thing.
