Cauliflower, Pea And Carrot Au Gratin Recipe

Ingredients
  • Cauliflower broccoli and carrots; , fresh or frozen, cut up
  • Matzo Meal
  • Corn Flake Crumbs;
  • Garlic & onion powders to taste
  • Salt & pepper to taste
  • 1 tb Oil
  • 1 Small-medium onion; sliced
  • 3 Egg Whites;

Directions
  • Step #1 Even my picky kids loved this! Partially cook the cauliflower, broccoli & carrots (I put them in the microwave for 7 mins with a little water.
  • Step #2 ), drain, & place in mixing bowl.
  • Step #3 While these vegetables are cooking, saute the onion in the oil.
  • Step #4 Add to the vegetables.
  • Step #5 Add garlic & onion powders to taste; add salt & pepper to taste.
  • Step #6 Add egg whites (or eggs), mix.
  • Step #7 Add matzo meal as needed to thicken.
  • Step #8 (Corn flake crumbs may be used instead, if desired.
  • Step #9 ) Grease a baking dish & coat with a thin layer of corn flake crumbs.
  • Step #10 (On Passover, use matzo meal instead.
  • Step #11 ) Spoon kugel mixture onto this layer, & top this with another layer of crumbs.
  • Step #12 bake this at 350 degrees.
  • Step #13 Note: For those who do not use matzo meal on Passover, use potato starch instead, & omit the top & bottom layer of crumbs.
