Caviar Parfait Recipe

Ingredients
  • 2 oz Caviar
  • === GARNISH ===
  • Emeril's Essence
  • 6 Prawns; peeled, deveined,
  • Emeril's Essence; see Note
  • 1 c Champagne
  • Freshly-ground black pepper; to taste
  • Their heads left on
  • 3 tb Minced shallots
  • Fried spinach
  • 1 lb Butter; cut into cubes
  • Salt; to taste
  • 2 tb Olive oil
  • 1 tb sliced parsley

Directions
  • Step #1 Note: See the "Emeril's Essence Information" recipe which is included in this collection.
  • Step #2 In a sauce pan, bring the shallots & champagne up to a boil.
  • Step #3 Reduce the liquid by half, about 3 to 4 mins.
  • Step #4 Whisk in each cube of butter until fully incorporated.
  • Step #5 Spice up this with salt & pepper.
  • Step #6 Spice up the prawns with Emeril's Essence.
  • Step #7 In a saute pan, heat the olive oil.
  • Step #8 When the pan is smoking hot, saute the prawns for 3 to 4 mins on each side.
  • Step #9 remove this from the pan.
  • Step #10 To finish the sauce, carefully fold in the caviar.
  • Step #11 Place the prawns on a plate & spoon the sauce over the top.
  • Step #12 Garnish with fried spinach, parsley & Essence.
  • Step #13 This recipe yields 2 servings.
