Caviar Pasta Recipe

Ingredients
  • 1 pn Salt
  • 1/2 c Brunoise red onions
  • 1/2 c Finely-sliced freshly parsley leaves
  • 7 oz Assorted caviar
  • 4 Egg yolks
  • 1/2 c Finely-sliced egg whites
  • 1 tb Cornstarch
  • 1/2 c Finely-sliced egg yolk
  • 2 c Heavy cream

Directions
  • Step #1 In a saucepan, mix 1 3/4 c cream with a pinch of salt.
  • Step #2 Bring the cream to a simmer.
  • Step #3 Whisk in the eggs & continue to cook for 2 mins.
  • Step #4 Whisk the cornstarch & remaining cream together.
  • Step #5 Whisk into the hot cream & continue to cook for 3 mins.
  • Step #6 remove this from the heat & cool completely.
  • Step #7 put in the fridge until chilled.
  • Step #8 To assemble, place some of the caviar in the bottom of four fluted glasses.
  • Step #9 Place a tbsp of the onions, egg whites, egg yolk & parsley over the caviar.
  • Step #10 Spoon tbsps of the cream over the parsley.
  • Step #11 Repeat the layering of the caviar & traditional garnishes.
  • Step #12 Spoon the remaining custard into the glasses.
  • Step #13 Garnish with the remaining caviar.
  • Step #14 Serve immedietly.
  • Step #15 This recipe yields 4 servings.
