Cedar-planked Salmon With Maple Glaze And Mustard Mashed Recipe

Ingredients
  • 1 ts Coriander seed
  • 2 Cedar dowels;
  • 1 ts Black pepper
  • 1/4 c Olive oil
  • 4 Cloves
  • 2 Tuna loin blocks;
  • 1 ts Dried sage
  • 1 ts Salt

Directions
  • Step #1 Grind all dry ingredients in an electric spice mill; then mix in small bowl with olive oil & set aside.
  • Step #2 Next, pierce tuna loin completely through with a small wooden skewer to create starter holes for the dowels.
  • Step #3 Then very carefully slide oiled dowels through the tuna.
  • Step #4 Carefully rub spice mix on tuna & put in the fridge until ready to toast.
  • Step #5 When the mood is right & the fire is roasting, toast the tuna over an open fire until medium rare (about 15 seconds per side.
  • Step #6 ) Yield: 2 servings.
