Celery And Potato Gratin Recipe

Ingredients
  • 8 Sticks celery; sliced
  • 1 bn Salad onions; sliced
  • Salt & freshly ground black pepper
  • 2 tb Freshly sliced parsley
  • 1 1/4 l Vegetable or chicken stock;
  • 1 tb Olive oil
  • 15 g Butter;
  • 1 Clove garlic; crushed
  • 25 g Rolled oats;
  • 1 Red pepper; de-seeded and sliced
  • Celery leaves to garnish

Directions
  • Step #1 Heat the oil & butter in a pan & fry the celery, pepper & garlic for 5 mins, onions, stirring every once in awhile.
  • Step #2 Add the parsley, stock, oats & Spice uping.
  • Step #3 Bring to the boil then cover & let simmer for 20 mins.
  • Step #4 allow this to cool slightly then process the soup in a food processor/blender or mixer until smooth.
  • Step #5 Return to the saucepan, heat through & serve garnished with celery leaves.
