175 g Frozen whole leaf spinach; cooked & squeezed dry
1 Sprig fresh basil to garnish
3 md Size eggs
Directions
Step #1 Preheat the oven to 160 ?C, 325F ?F, Gas Mark 3.
Step #2 Melt the butter & cook the celery for 2-3 mins, stirring every once in awhile.
Step #3 Place the mixture in a mixer with 1 egg, 25g (1oz) soft cheese & Spice uping to taste.
Step #4 mix until smooth then pour the mixture into a lightly oiled 500g (1lb) loaf tin.
Step #5 Place the spinach, 1 egg & Spice uping to taste in the mixer, 25g (1oz) soft cheese, mix until smooth then carefully spoon on top of the celery layer.
Step #6 Finally, remaining soft cheese, mix the carrots, egg & Spice uping & spread on top of the spinach layer.
Step #7 Cover with a sheet of lightly oiled foil & bake in the preheated oven for 1 hr.
Step #8 allow this to cool in the tin & chill until required.
Step #9 Carefully run a knife around the edge of the tin & turn the terrine out onto a plate on a pool of tomato coulis.
Step #10 Garnish with sprigs of basil.
Step #11 Delicious served sliced as a first course or light lunch.
