Cereal Snack Mix Recipe

Ingredients
  • 1/4 c Cooked moong dalBR 250 g tapioca flour;
  • 1/4 ts Salt;
  • 1/4 ts Green colour;
  • 1/4 ts Pandan essence;
  • 225 g Palm sugar
  • Crushed ice as required
  • 2 c Coconut milk;
  • 2 c Water;

Directions
  • Step #1 BRING the water to a boil.
  • Step #2 Add green colour.
  • Step #3 Mix the cooked moong dal with tapioca flour & add to the boiling water.
  • Step #4 Mix well to a smooth dough & add the pandan essence.
  • Step #5 Knead well, roll out into a sheet & cut into strips.
  • Step #6 Cook the strips in boiling water & transfer them to cold water.
  • Step #7 Keep the cendol aside.
  • Step #8 Dissolve palm sugar in a c of water & set aside.
  • Step #9 Mix coconut milk with salt.
  • Step #10 To serve: Put cendol into a tall glass, add palm sugar syrup, coconut milk & top with crushed ice.
