Champagne Sabayon Recipe

Ingredients
  • 1/2 ts Salt
  • 1 c Granulated sugar
  • 1/4 c Butter
  • 1/4 ts Each ground cloves and cinnamon
  • 4 ts Cornstarch
  • 2 c Champagne
  • 1 c Raisins

Directions
  • Step #1 1.
  • Step #2 In saucepan, bring 1 c of the champagne & raisins to boil; reduce heat to low & let simmer for 5 mins.
  • Step #3 2.
  • Step #4 Dissolve cornstarch in remaining champagne; add to saucepan along with sugar, salt, butter, cloves & cinnamon.
  • Step #5 Cook stirring, until boiling & slightly thickened, 2 to 3 mins.
  • Step #6 pour this into sauceboat.
  • Step #7 Makes about 3 c enough for 12 servings.
  • Step #8 Instead of champagne, you could use half champagne & half white wine or sherry & serve this with Braised Ham.
