Champagne Sabayon Recipe

Ingredients
  • 1/2 c Fresh raspberries
  • 2 ts Sugar
  • 8 Slices; ?
  • 3 Egg yolks
  • 2 tb Chiffonade or sliced fresh mint
  • 1/4 ts Vanilla
  • 1 lb Cake; 1/2-inch thick
  • 1/4 c Champagne

Directions
  • Step #1 Preheat the oven to 450 degrees.
  • Step #2 In a stainless steel bowl, whisk the first four ingredients together, until frothy.
  • Step #3 Place the bowl over a double boiler.
  • Step #4 Whisk the mixture for 2 mins & remove this from the heat.
  • Step #5 Continue whisking for 20 seconds.
  • Step #6 Fold in the raspberries.
  • Step #7 Place 2 slices of the lb cake in each of 4 individual gratin dishes.
  • Step #8 Spoon a fourth of the sabayon over each dish, covering the cake completely.
  • Step #9 Place the gratin in the oven & bake this until the top is golden-brown, about 3 mins.
  • Step #10 remove this from the oven & place on a plate.
  • Step #11 Garnish with mint.
  • Step #12 This recipe yields 4 servings.
