Cheddar And Roasted Red Bell Pepper Soup Recipe

Ingredients
  • 1/4 lb Extra-sharp yellow Cheddar; grated coarse
  • 1/2 c Bottled mayonnaise
  • 1 1/2 ts Dijon-style mustard
  • Saltine crackers as an accompaniment
  • 1 Green bell pepper; cut into very thin 1-inch-long strips
  • 1/4 lb Extra-sharp white Cheddar; grated coarse
  • 1/2 c Thinly sliced scallion

Directions
  • Step #1 In a bowl toss together the Cheddars, the bell pepper, & the scallion, the mustard, add the mayonnaise, & black pepper to taste, & mix the mixture well.
  • Step #2 The spread keeps, covered & chilled, for 1 week.
  • Step #3 Serve the spread with crackers.
  • Step #4 Makes about 2 c.
