1 Green bell pepper; cut into very thin 1-inch-long strips
1/4 lb Extra-sharp white Cheddar; grated coarse
1/2 c Thinly sliced scallion
Directions
Step #1 In a bowl toss together the Cheddars, the bell pepper, & the scallion, the mustard, add the mayonnaise, & black pepper to taste, & mix the mixture well.
Step #2 The spread keeps, covered & chilled, for 1 week.
Step #3 Serve the spread with crackers.
