Cheese And Onion Flan With Peanut Pastry Recipe

Ingredients
  • 8 md Slice wholemeal bread; crusts removed
  • 1 lg Onion; finely sliced
  • 18 fl Skimmed milk
  • Black pepper
  • 1 tb Corn oil
  • 1/2 ts Thyme
  • 3 md Eggs
  • 1 Dsp freshly sliced chives
  • 4 1/2 oz Reduced-fat Cheddar cheese; grated
  • 3 oz Parmesan cheese; grated

Directions
  • Step #1 This is a cheese-lover's delight & makes a really robust meal it needs only a large mixed salad to go with it.

  • Step #3 Preheat the oven to 100?C/375?F/Gas mark 5 & brush an oblong baking dish with a little oil.
  • Step #4 2.
  • Step #5 Heat the remaining oil in a frying pan & fry the onions with the thyme over a gentle heat, stirring every once in awhile, for 15-20 mins until very soft & just turning golden.
  • Step #6 Mix the cheeses & the chives in a small bowl.

  • Step #8 Put 4 slices of bread on the bottom of the prepared dish ensuring that they fit exactly.

  • Step #10 Cover with the onion mixture & half the cheese mixture.
  • Step #11 Put the other slices of bread over & cover with the remaining cheese.
  • Step #12 5.
  • Step #13 Whisk the eggs & milk together in a bowl & Spice up this with pepper.
  • Step #14 Pour this over the bread & cheese mixture.

  • Step #16 Bake for 30 mins, or until puffed up & golden.
