Cheese Baked Enchilada Casserole Recipe

Ingredients
  • 1/4 ts Pepper
  • 6 Strips bacon
  • 1/2 ts Salt
  • 1 c Shredded cheddar cheese
  • 1/2 c sliced green onions
  • 1 c Sliced mushrooms
  • 4 lg Baking potatoes; scrubbed
  • 1 c Broccoli flowerets
  • 1/3 c Sour cream
  • 1 Clove minced garlic

Directions
  • Step #1 Prick potatoes with a fork.
  • Step #2 bake this at 425F degrees for one hr.
  • Step #3 Remove from oven & cool for 15 mins.
  • Step #4 In a large skillet, cook bacon until crisp.
  • Step #5 Drain on paper towels.
  • Step #6 Remove all but 2 tbsps bacon drippings from skillet.
  • Step #7 Add broccoli mushrooms, onions and garlic to drippings.
  • Step #8 cook this until tender, about 3 mins.
  • Step #9 Cut a lengthwise slice off of each potato.
  • Step #10 Scoop out most of pulp to make shells.
  • Step #11 mix potato pulp, sour cream, vegetable mixture, salt and pepper.
  • Step #12 Mix well.
  • Step #13 stir in the crumbled bacon.
  • Step #14 Spoon mixture into potato shells.
  • Step #15 Sprinkle top with cheese.
  • Step #16 bake this until hot at 400F degrees.
  • Step #17 Yield: 4 potatoes.
