Chicken Adoboi Recipe

Ingredients
  • ground black pepper to taste
  • 1/4 c apple cider vinegar
  • 1 (2 to 3 lb) whole chicken, cut into pieces
  • 2 bay leaves
  • 2 tbsps olive oil
  • 1 clove garlic, crushed
  • 1/4 c soy sauce

Directions
  • Step #1 Place chicken pieces in a large bowl.
  • Step #2 Pour vinegar & soy sauce over chicken, & season this with ground black pepper to taste.
  • Step #3 Toss to coat.
  • Step #4 Heat oil in a large skillet over med-heat/flame, & brown garlic.
  • Step #5 Be careful not to burn garlic, as this will make the dish taste bitter.
  • Step #6 After browning garlic, remove it from the oil.
  • Step #7 Place marinated chicken pieces in hot oil.
  • Step #8 Pour remaining marinade over all, & add bay leaves.
  • Step #9 Reduce heat to low, & cook chicken pieces for about 10 mins on each side, or until no longer pink & juices run clear.
  • Step #10 The marinade will reduce, & make a nice gravy.
  • Step #11 Remove bay leaves, & serve as soon as possible.
