Cheese Cornbread Recipe

Ingredients
  • 1 ts Sugar
  • 8 md Well rounded firm capsicums;
  • 5 Green chillies ground to paste;
  • Salt to tast
  • 1/2 c Grated cheese
  • 3/4 c Corn kernels boiled
  • 1 tb Oil
  • 2 Flakes garlic ground to paste;
  • 1 1 inch piece ginger ground to paste

Directions
  • Step #1 Heat oil in a vessel, add all the grounded paste & fry for one min.
  • Step #2 Add the corn, cheese sugar & salt.
  • Step #3 Stir well, let all the wateriness evaporate.
  • Step #4 Keep aside.
  • Step #5 Boil water in a large pan.
  • Step #6 Slit the capsicum horizontally just below the stalk.
  • Step #7 Should resemble a jar with a lid.
  • Step #8 Scoop out the seeds.
  • Step #9 Place them in boiling water & let simmer for 2-3 mins.
  • Step #10 Drain & put on kitchen towel to remove excess water.
  • Step #11 Stuff the filling & cover with the caps.
  • Step #12 Secure with string.
  • Step #13 Place in casserole, dab with very little butter & bake in hot oven till tender.
  • Step #14 Remove strings & serve hot with garlic rolls or plain bread.
