Cheese Filled Comice Halves Recipe

Ingredients
  • 1 3/4 ts Ground cumin
  • 1/4 ts Dried crushed red pepper
  • 1 tb Butter
  • 1 1/2 ts Ground coriander
  • 1/2 cn sliced green chilies; drained
  • 3 Green onions; minced
  • 1 c Milk
  • 1/2 pk Frozen sliced spinach;
  • 1 c Whipping cream
  • 1 tb All purpose flour
  • 6 tb sliced fresh cilantro
  • ---SAUCE------

Directions
  • Step #1 -ENCHILADAS---- 1/2 c Vegetable oil 12 Corn tortillas; (6-inch) 3 c Grated mild cheddar cheese 1 1/2 c Grated Monterey Jack cheese 1/2 c Finely sliced onion 1 tb sliced fresh cilantro 1/2 c Sour cream For sauce: Cook spinach according to package instructions.
  • Step #2 Drain well.
  • Step #3 Set aside.
  • Step #4 Melt butter in heavy medium skillet over med-heat/flame.
  • Step #5 Add flour & stir mixture 2 mins; do not brown.
  • Step #6 slowly whisk in whipping cream & milk.
  • Step #7 Simmer until thickened, about 5 mins.
  • Step #8 stir in the spinach, cumin, cilantro, chilies, green onion, coriander and red pepper.
  • Step #9 Puree in batches in processor until almost smooth.
  • Step #10 Spice up with salt & pepper.
  • Step #11 (Can be prepared 1 day ahead.
  • Step #12 Cover and put in the fridge.
  • Step #13 Bring to about room temp before using.
  • Step #14 ) For enchiladas: Heat oil in heavy small skillet over medium-high heat.
  • Step #15 Using tongs, briefly dip each tortilla in oil to soften, about 15 seconds per side.
  • Step #16 Transfer to paper towels & drain.
  • Step #17 mix cheeses in large bowl; set aside 1 1/2 c for topping.
  • Step #18 mix onion & cilantro in small bowl.
  • Step #19 Place 1/4 c cheese mixture in center of 1 tortilla.
  • Step #20 Spoon 2 tsps onion mixture over.
  • Step #21 Roll up tortilla.
  • Step #22 Place seam side down in large glass baking dish.
  • Step #23 Repeat with remaining tortillas, cheese & onion, using 1/4 c cheese for each.
  • Step #24 (Can be made 1 day ahead.
  • Step #25 Cover & chill.
  • Step #26 ) preheat your trusty oven to 375F.
  • Step #27 Stir sour cream into sauce; pour over enchiladas.
  • Step #28 Sprinkle top with reserved 1 1/2 c cheese.
  • Step #29 bake this until cheese melts & enchiladas are heated through, about 25 mins.
