Cheese Quesadillas With Tuna Recipe

Ingredients
  • 1 c Grated Cheddar cheese
  • 8 lg Flour tortillas
  • 2 ts Minced garlic
  • 1 sm Can sliced green chilies
  • 2 Avocados; peeled, pitted,
  • 1 c Grated Monetary Jack Jalapeno cheese
  • Juice of two lemons
  • Salt; to taste
  • Freshly-ground black pepper; to taste
  • 1 tb Vegetable oil
  • 1/4 c sliced red onions
  • 1 ds Crystal Hot Sauce
  • & sliced

Directions
  • Step #1 In a mixing bowl, add the avocados.
  • Step #2 Using a fork, slightly mash the avocados.
  • Step #3 Add the lemon juice, garlic, & red onions.
  • Step #4 Mix thoroughly.
  • Step #5 Spice up the mixture with salt, pepper & hot sauce.
  • Step #6 Sprinkle top 1/4 of each cheese over the top of four individual tortillas.
  • Step #7 Top the tortillas with the remaining four tortillas.
  • Step #8 In a saute pan, heat 1 tsp of the oil.
  • Step #9 When the oil is hot, carefully lay a quesadilla in the hot oil & pan-fry for 2 to 3 mins on each side, or until golden brown.
  • Step #10 Remove the quesadilla from the pan & repeat the cooking process for the remaining quesadillas.
  • Step #11 Serve the quesadillas with the guacamole.
  • Step #12 This recipe yields 4 servings.
