Cheese Ravioli With Old-fashioned Meat Sauce Recipe

Ingredients
  • 1/4 ts Freshly ground black pepper
  • 3 Cloves garlic; crushed
  • 1 ts Olive oil
  • 18 oz Packaged fresh cheese ravioli
  • 6 1/2 oz Jarred marinated artichokes; drained well
  • 1/2 ts Salt
  • 1/2 c Sliced scallions
  • 1 tb Olive oil
  • Peeled & sliced
  • 1 lb Fresh ripe plum tomatoes
  • Grated Parmesan cheese

Directions
  • Step #1 This sauce is quick & easy.
  • Step #2 It goes well with other pasta types such as tortellini or penne.
  • Step #3 I serve this with a good quality, crusty bread.
  • Step #4 1 Cook ravioli according to package directions.
  • Step #5 2 While the pasta is cooking, prepare the sauce.
  • Step #6 In a large nonstick skillet, heat 1 tbsp oil over a medium high flame.
  • Step #7 Add tomatoes, scallions, artichokes, garlic, & salt & pepper.
  • Step #8 Cook 2 to 3 mins, stirring every once in awhile, until vegetables are warmed through.
  • Step #9 remove this from heat.
  • Step #10 3 Drain pasta well.
  • Step #11 Transfer to a large bowl, & toss with 1 tsp oil.
  • Step #12 Add half of the sauce to the ravioli; toss carefully, but thoroughly to mix.
  • Step #13 Transfer ravioli to a large serving platter.
  • Step #14 Pour remaining vegetable sauce over ravioli.
  • Step #15 Garnish with Parmesan cheese.
  • Step #16 Makes 4 - 6 servings.
