Cheese Squares Recipe

Ingredients
  • 1/4 c Parsley; sliced
  • 2 ts Freshly grated lemon rind
  • 1 ts Fresh lemon juice
  • 6 oz Feta cheese; crumbled
  • 1/2 c Finely sliced onion
  • 1/4 c Fresh dill; sliced
  • 2 tb Extra-virgin olive oil
  • 10 oz Fresh spinach; coarse stems discarded, rinsed

Directions
  • Step #1 1.
  • Step #2 In a large pot, covered, cook the spinach over moderate heat in the water left clinging to the leaves, stirring every once in awhile for 5 mins or until it is wilted.
  • Step #3 Plunge the spinach into ice water to stop the cooking & drain it in a colander.
  • Step #4 Squeeze the spinach well in a kitchen towel & chop it.

  • Step #6 In a large skillet, cook the onion in the oil over moderate heat for 3 mins.
  • Step #7 In a food processor/blender, the spinach, mix the onion, & the remaining ingredients except the feta & pulse until it is just mixd.
  • Step #8 Transfer the mixture to a bowl & stir in the the feta & salt & pepper to taste.
