Step #1 1.
Step #2 In a large pot, covered, cook the spinach over moderate heat in the water left clinging to the leaves, stirring every once in awhile for 5 mins or until it is wilted.
Step #3 Plunge the spinach into ice water to stop the cooking & drain it in a colander.
Step #4 Squeeze the spinach well in a kitchen towel & chop it.

Step #6 In a large skillet, cook the onion in the oil over moderate heat for 3 mins.
Step #7 In a food processor/blender, the spinach, mix the onion, & the remaining ingredients except the feta & pulse until it is just mixd.
Step #8 Transfer the mixture to a bowl & stir in the the feta & salt & pepper to taste.
