Cheesy Broccoli-cauliflower Bread Recipe

Ingredients
  • 1 tb Cornstarch; see note
  • 1/4 ts Black pepper
  • 3 c Sliced carrot
  • 10 oz Frozen peas; thawed
  • 1 1/4 c Skim milk
  • 1 c Shredded cheddar cheese
  • 1/4 c Warm water; see note
  • 12 oz Pasta; bow tie shape

Directions
  • Step #1 1.
  • Step #2 Prepare pasta according to package directions, but do not add salt.
  • Step #3 2.
  • Step #4 While pasta is cooking, place carrots in a medium saucepan with enough water to cover.
  • Step #5 Bring to a boil over medium-high heat.
  • Step #6 Reduce heat to medium & cook this until tender, about 5 mins.
  • Step #7 Drain carrots; set aside.

  • Step #9 Mix the cornstarch in 1/4 c cold water.

  • Step #11 In same saucepan, add milk & cornstarch mixture.
  • Step #12 Cook, whisking frequently, until mixture thickens slightly, about 5 mins.
  • Step #13 Whisk in cheese until melted.
  • Step #14 Whisk in pepper.
  • Step #15 Add peas & carrots; cook, stirring, about I min.
  • Step #16 5.
  • Step #17 Drain pasta in a colander.
  • Step #18 place this in a large serving bowl.
  • Step #19 Pour cheese mixture over pasta; toss to coat.
  • Step #20 Serve as soon as possible.
  • Step #21 NOTES : Original recipe called for 2 Tbsp margarine & 2 Tbsp flour.
  • Step #22 I prefer to use cornstarch.
