Cherries Jubilee Recipe

Ingredients
  • 1 tb Cornstarch
  • 1 tb Cold water
  • Juice of one orange
  • 1 pt Vanilla bean ice cream
  • 1 lb Bing cherries
  • 1 Stick Butter
  • 1 c Cherry brandy
  • Zest of one orange
  • 1 c Sugar

Directions
  • Step #1 In a large sauce pan, over med-heat/flame, melt the butter.
  • Step #2 stir in the the sugar & cook for about 2 mins, or until the sugar dissolves.
  • Step #3 Add the cherries, orange juice & orange zest.
  • Step #4 Saute for 2 to 3 mins.
  • Step #5 In a small c, stir the cornstarch & water together, for a slurry.
  • Step #6 Stir the slurry into the cherry mixture & cook for 1 min.
  • Step #7 Remove the pan from the heat & pour the brandy over the cherries.
  • Step #8 Place the pan back on the heat & carefully shake the pan several times to ignite the pan.
  • Step #9 If the pan does not light use a match to flame the cherries.
  • Step #10 Divide the ice cream between four shallow bowls.
  • Step #11 Spoon the cherry mixture over the ice cream & serve.
  • Step #12 This recipe yields 4 servings.
