Cherry Souffle With Chocolate Ganache Recipe

Ingredients
  • 8 oz Soft white breadcrumbs
  • Coarse white sugar for sprinkling
  • 2 lb Fresh ripe cherries
  • 12 Floz red wine
  • 6 oz White sugar
  • 1 Pinches salt
  • Flower heads of small clove pinks or gilded whole cloves
  • 2 oz Unsalted butter

Directions
  • Step #1 Wash the cherries & discard the stems & stones.
  • Step #2 Puree the fruit in a mixer with 5floz of the wine & half the sugar.
  • Step #3 Add a little more wine if you need to.
  • Step #4 Melt the butter in a saucepan & add the fruit puree, remaining wine, breadcrumbs, sugar & the salt.
  • Step #5 Simmer, stirring steadily, until the puree is very thick.
  • Step #6 pour this into a serving bowl, cover & leave to cool.
  • Step #7 When quite cold, decorate the edge of the bowl with flowers or whole cloves & Sprinkle top coarse sugar over the centre.
