Chicken And Black Bean Casserole Recipe

Ingredients
  • 2 sm Jalapeno peppers; stemmed, minced
  • 1/4 c sliced cilantro
  • Emeril's Essence; see Note
  • 2 Dozen Wooden skewers; soaked in water
  • 1 c Vegetable oil
  • 2 c Dry roasted peanuts
  • 2 Beef fillets -;
  • Freshly-ground black pepper; to taste
  • 2 Boneless skinless chicken breasts; -
  • 1/2 c Soy sauce
  • 1/2 c Sesame oil
  • 2 tb sliced garlic

Directions
  • Step #1 Note: See the "Emeril's Essence Information" recipe which is included in this collection.
  • Step #2 Using a sharp knife, slice each chicken breast & fillet into 6 equal strips, crosswise.
  • Step #3 Place a piece of plastic wrap over 6 chicken strips.
  • Step #4 Using a meat mallet, lightly lb the chicken & beef out thin.
  • Step #5 Spice up the lbed meat pieces with Emeril's Essence.
  • Step #6 In a food processor, cilantro, soy sauce, sesame oil, mix the peanuts, vegetable oil, & jalapenos.
  • Step #7 Puree the mixture until smooth.
  • Step #8 Spice up the mixture with salt & pepper.
  • Step #9 Thread the chicken strips through the wooden skewers.
  • Step #10 Thread the fillet through the wooden skewers.
  • Step #11 Place the skewers in a large glass rectangular dish.
  • Step #12 Pour the marinade over the skewers.
  • Step #13 Using a small pastry brush, coat each skewer completely.
  • Step #14 Marinate the skewers overnight.
  • Step #15 Preheat the grill.
  • Step #16 Grill the skewers in batches.
  • Step #17 Grill the skewers for 2 to 3 mins on each side.
  • Step #18 Remove the skewers from the grill & place on a large serving platter.
  • Step #19 Garnish with a drizzle of sesame oil & sliced cilantro.
  • Step #20 Serve warm.
