Ingredients
  • 1 cn Low-salt chicken broth;
  • 1 c Half & half
  • 2 tb sliced fresh thyme or 1 1/2 tsps dried
  • 3 sl Bacon; sliced
  • 1 md Onion; sliced
  • 6 oz Skinless boneless chicken thighs; cut into 1/2-inch pieces , up to 8
  • 1 Russet potato; peeled, cut into 1/2-inch pieces
  • 2 c Corn kernels; fresh or frozen

Directions
  • Step #1 Cook bacon in heavy large saucepan over medium-high heat until brown & crisp, about 5 mins.
  • Step #2 Using slotted spoon, transfer bacon to paper towels & drain.
  • Step #3 Discard all but 2 tbsps drippings from pan.
  • Step #4 Add onion; saute until beginning to soften, about 3 mins.
  • Step #5 Add broth & potato.
  • Step #6 Cover pan; simmer 5 mins.
  • Step #7 Add corn, chicken and thyme.
  • Step #8 Partially cover pan; simmer until chicken is cooked through & vegetables are tender, about 8 mins.
  • Step #9 Add half & half and bring to simmer, about 2 mins.
  • Step #10 Spice up chowder to taste with salt & pepper.
  • Step #11 Ladle into bowls.
  • Step #12 Sprinkle top with cooked bacon & serve.
  • Step #13 2 Servings; can be doubled.
