Chicken And Fall Vegetable Pot Pie Recipe

Ingredients
  • 2 Shallots; thinly sliced
  • 1/2 lb Mushrooms; sliced
  • 2 c Shredded escarole;
  • 2 Celery ribs; thinly sliced
  • 1 Carrot; shredded
  • 8 c Chicken broth
  • 2 tb Olive oil

Directions
  • Step #1 Heat oil in large pot.
  • Step #2 Add mushrooms, celery, shallots, & carrot.
  • Step #3 Cook over med-heat/flame, stirring every once in awhile, for 5 mins.
  • Step #4 Add escarole & chicken broth.
  • Step #5 Bring to a boil, reduce heat to medium, & let simmer for 10 mins.
  • Step #6 Ladle into bowls & serve hot.
  • Step #7 This recipe yields 6 servings.
