Ingredients
  • 1 550 gram jar passata
  • 1 15 grams pac fresh thyme; sliced
  • 4 Skin-on chicken breast fillets; halved
  • Salt & freshly ground black pepper
  • 12 Pitted black olives
  • 1 250 gram bag shallots; peeled & halved
  • 2 tb Olive oil with a hint of garlic
  • 1 Green & 1 yellow pepper; de-seeded and sliced

Directions
  • Step #1 1.
  • Step #2 Heat the oil in a flameproof casserole, add the chicken and shallots & fry until lightly browned.
  • Step #3 Drain off excess oil.
  • Step #4 2.
  • Step #5 Pour over the passata, add most of the fresh thyme & Spice uping & stir well.
  • Step #6 3.
  • Step #7 place this in a preheated oven 180 ?C, 350 ?F, Gas Mark 4 for 30 mins.
  • Step #8 4.
  • Step #9 stir in the the peppers & olives & return to the oven for a further 30 mins.
  • Step #10 5.
  • Step #11 Sprinkle top it over the remaining thyme & serve this with Italian bread.
