Chicken And Vegetables In Saffron Broth Recipe

Ingredients
  • 2 tb Lime juice; up to 3
  • 2 tb Tuong Ot; Chili Garlic Sauce
  • 2 Cloves garlic; minced
  • 1/3 lg Zucchini; julienned, about
  • 1 tb Vegetable oil
  • 1/4 c Soy sauce
  • 1 sm Squash; sliced
  • 1 tb Sesame oil
  • 1 sm Onion; sliced
  • 1/2 lb Cabbage; sliced
  • 1/2 lb Boned/skinned chicken breast; cut into chunks
  • 1/2 ts Ground ginger or equivalent fresh; minced

Directions
  • Step #1 mix soy sauce, lime juice & ginger.
  • Step #2 Put chicken chunks in a bowl, pour soy mixture over them, & marinate, put in the fridged, about 1/2 hr or more.
  • Step #3 In a wok, heat 1 tbsp.
  • Step #4 vegetable oil over med-heat/flame.
  • Step #5 Add garlic; stir-fry about 30 seconds.
  • Step #6 Add onion & cook this until just translucent.
  • Step #7 Remove chicken pieces from marinade (reserve) & add to wok in small batches; brown & remove.
  • Step #8 Add sesame oil & cabbage & cook about 5 mins or until cabbage is tender.
  • Step #9 Add zucchini, squash, browned chicken pieces & reserved marinade.
  • Step #10 Cook about 4 more mins or until chicken is just done; add chile garlic sauce & stir well to distribute.
  • Step #11 Serve over steamed white rice.
