Chicken Breast Saute With Vinegar-t
Ingredients
1/4 ts Grated fresh nutmeg
1 tb Cornstarch mixed with 1 tbsp water
1/2 c Dark raisins
4 Breasts of chicken
2 Shallots; sliced
Fresh herbs for garnish
1 c Port wine
2 tb Extra virgin olive oil; divided
1 c Heavy cream; or evaporated milk
2 tb Balsamic vinegar
Salt & freshly ground pepper; to taste
1/4 lb Fresh mushrooms
Directions
Step #1 Soak the raisins in the port wine at least 1 hr or, preferably, overnight.
Step #2 preheat your trusty oven to 375 degrees.
Step #3 In a saute pan, heat 1 tbsp of the olive oil.
Step #4 When hot, saute the chicken breasts on one side until golden brown.
Step #5 Turn the chicken over & transfer to an ovenproof dish.
Step #6 Bake for 10 mins.
Step #7 In the meantime, in the saute pan, heat the remaining 1 tbsp olive oil.
Step #8 Add the shallots & sweat them for 2 mins.
Step #9 Add the mushrooms & saute them for 2 mins.
Step #10 Add the vinegar & reduce until almost dry.
Step #11 stir in the the raisins & their soaking liquid.
Step #12 Cook until the liquid is reduced by half.
Step #13 Add the cream or evaporated milk, nutmeg, & cornstarch mixture.
Step #14 Cook for 2 more mins, but do not bring to a boil.
Step #15 Adjust the Spice uping with salt & pepper.
Step #16 Spoon the sauce onto serving plates, set a chicken breast on top, & garnish with fresh herbs.
