Chicken Breast In Hot Chilli Sauce Recipe

Ingredients
  • 1/4 ts Grated fresh nutmeg
  • 1 tb Cornstarch mixed with 1 tbsp water
  • 1/2 c Dark raisins
  • 4 Breasts of chicken
  • 2 Shallots; sliced
  • Fresh herbs for garnish
  • 1 c Port wine
  • 2 tb Extra virgin olive oil; divided
  • 1 c Heavy cream; or evaporated milk
  • 2 tb Balsamic vinegar
  • Salt & freshly ground pepper; to taste
  • 1/4 lb Fresh mushrooms

Directions
  • Step #1 Soak the raisins in the port wine at least 1 hr or, preferably, overnight.
  • Step #2 preheat your trusty oven to 375 degrees.
  • Step #3 In a saute pan, heat 1 tbsp of the olive oil.
  • Step #4 When hot, saute the chicken breasts on one side until golden brown.
  • Step #5 Turn the chicken over & transfer to an ovenproof dish.
  • Step #6 Bake for 10 mins.
  • Step #7 In the meantime, in the saute pan, heat the remaining 1 tbsp olive oil.
  • Step #8 Add the shallots & sweat them for 2 mins.
  • Step #9 Add the mushrooms & saute them for 2 mins.
  • Step #10 Add the vinegar & reduce until almost dry.
  • Step #11 stir in the the raisins & their soaking liquid.
  • Step #12 Cook until the liquid is reduced by half.
  • Step #13 Add the cream or evaporated milk, nutmeg, & cornstarch mixture.
  • Step #14 Cook for 2 more mins, but do not bring to a boil.
  • Step #15 Adjust the Spice uping with salt & pepper.
  • Step #16 Spoon the sauce onto serving plates, set a chicken breast on top, & garnish with fresh herbs.
